Method
- Heat the oil in a frying pan over medium heat. Cook the onion for 4–5 minutes until softened, then stir in the garlic and ginger for 1 minute.
- Add the tomatoes, cumin, turmeric and chilli powder. Cook for 3–4 minutes, stirring, until the tomatoes soften.
- Add the peas and enough of the measured water to prevent sticking. Cook for 2–3 minutes until the peas are hot and tender.
- Fold in the crumbled paneer and garam masala. Cook gently for 2–3 minutes until hot. Avoid overcooking so the paneer stays tender. Add salt to taste and fresh coriander.
Contains milk (paneer). Serve with paratha, roti or rice and a simple salad. For a dairy-free variation, use firm tofu instead of paneer and check all accompaniments.
